Israeli Salad with Figs, Chicken and Goat Cheese

500 grams Chicken Breast
500 grams Tomato
500 grams Cucumber
500 grams Green Pepper
6 Figs
½ cup Chopped Green Onions
½ cup Chopped Mint
½ cup Chopped Parsley
1 Lemon
3 fl oz Vinegar
½  cup Pomegranate Juice
1 cup Goat Cheese
2 Tbsp Olive Oil
1 Tsp Black Pepper
½ Tsp Salt
4 cup Romaine Lettuce

  1. Cook, cool and slice the chicken.
  2. Chop all the tomato, cucumber, green pepper, green onion, parsley, mint and figs into small pieces.
  3. Mix with the olive oil, zest and lemon juice, pomegranate juice and vinegar. Add tomato mix. Season with salt and pepper.
  4. On a plate add the lettuce, add the salad, fan the chicken and sprinkle the crumbled goat cheese.
