Israeli Salad with Figs, Chicken and Goat Cheese

Ingredients
500 grams | Chicken Breast |
500 grams | Tomato |
500 grams | Cucumber |
500 grams | Green Pepper |
6 | Figs |
½ cup | Chopped Green Onions |
½ cup | Chopped Mint |
½ cup | Chopped Parsley |
1 | Lemon |
3 fl oz | Vinegar |
½ cup | Pomegranate Juice |
1 cup | Goat Cheese |
2 Tbsp | Olive Oil |
1 Tsp | Black Pepper |
½ Tsp | Salt |
4 cup | Romaine Lettuce |

Directions
- Cook, cool and slice the chicken.
- Chop all the tomato, cucumber, green pepper, green onion, parsley, mint and figs into small pieces.
- Mix with the olive oil, zest and lemon juice, pomegranate juice and vinegar. Add tomato mix. Season with salt and pepper.
- On a plate add the lettuce, add the salad, fan the chicken and sprinkle the crumbled goat cheese.
